The terroir of Kimmeridgian marl known as "Terres Blanches" produces complex, full-bodied, fleshy wines.
Our Sancerre Blanc Terres Blanches comes from 3 parcels of around 30 years of age that flourish on this generous terroir. Situated on a hillside with south-east exposure, ripening is gradual and regular.
The grapes are harvested at optimum ripeness and transferred to the press by vibration. After long, low-pressure pneumatic pressing, the juice flows by gravity from the press to the vat, to avoid any handling of the grapes and juice. This is followed by 12 hours of cold static settling (natural settling of suspended particles), followed by alcoholic fermentation in temperature-controlled stainless steel vats.
The wine is aged in stainless steel vats for between 5 and 7 months on its fine lees to bring out its aromatic richness. It is then clarified, stabilized and bottled by us at the estate.
From vine to bottle, everything is done to respect and reveal the quality and expression of our terroirs.
The nose offers fresh, floral and white-fruit scents mingled with dried fruit aromas. On the palate, the wine is supple and full-bodied, while retaining a certain liveliness. Freshness and smoothness blend perfectly, giving this wine good balance and pleasant aromatic persistence.
Served between 10 and 12°C, our Sancerre Blanc Terres Blanches goes well with langoustines, fine fish and fine poultry in sauce, such as poularde de Bresse with morel mushroom sauce.
