We are fortunate to benefit from this remarkable Silex terroir on several Sauvignon Blanc parcels.
The siliceous-clay terroir known as "Silex" gives the wine a marked, straightforward personality and characteristic flinty notes.
Four of our parcels of 40-45 year-old vines flourish on this very special terroir.
The grapes are harvested at optimum ripeness and transferred to the press by vibration. After long, low-pressure pneumatic pressing, the juice flows by gravity from the press to the vat, avoiding any manipulation of the grapes or juice. This is followed by 12 hours of cold static settling (natural settling of suspended particles), followed by alcoholic fermentation in temperature-controlled stainless steel vats.
The wine is aged in stainless steel vats for 6 to 7 months on its fine lees to bring out its aromatic richness. It is then clarified, stabilized and bottled by us at the estate.
From the vine to the bottle, everything is done to respect and reveal the quality and expression of our terroirs.
The nose expresses fresh, floral and mineral scents. On the palate, the wine is mineral with light flinty notes, offering a concentrated, well-balanced wine with a hint of nervousness.
Served between 10 and 12°C, this distinctive Sancerre Blanc Silex is the perfect accompaniment to Armorican-style lobster, trout with almonds or a seafood platter.
