Our "Le Paradis" parcel is around sixty years old. It is located in Sancerre, on a hillside with a south-east exposure, on a terroir of Caillottes.
The healthy, fragrant Sauvignon Blanc grapes are harvested at optimum maturity. This high quality harvest is conveyed to the press by vibration, and the juices run off by gravity.
Alcoholic fermentation takes place in barrels, with no malolactic fermentation to preserve acidity and freshness.
The wine is aged for 12 months on fine lees in barrels containing several wines. The aim of barrel ageing is to allow the wine to interact with the outside world, but above all to express the terroir and uniqueness of this parcel, bringing texture and finesse.
The nose offers notes of grapefruit, hawthorn, fresh herbs and white pepper. The palate is silky and airy, with aromas of acacia flowers, honey and citrus fruit. Minerality, finesse and density are the hallmarks of this Sancerre.
Served between 10 and 12°C, our Sancerre Blanc Le Paradis will sublimate a scallop risotto, a blanquette of monkfish tail and blue or mature cheeses.
